Recipe: Pumpkin Roll

Here is a delicious recipe that Joy, the fabulous Paper and Ink Diva, that is the perfect dessert to serve this season.

  • 3 eggs
  • 2/3 cup of pumpkin
  • 1 cup of sugar
  • 3/4 cup of flour
  • 1 tsp. vanilla
  • 2 tsp. cinnamon
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt

Preheat oven to 375 degrees. In a bowl, beat eggs with a rotary beater for 5 minutes. Add pumpkin, sugar and vanilla, and mix well. In a separate bowl, mix dry ingredients, then add to it to the first mixture. Pour the mixture into a greased and wax paper 15" x 10" x 1" jelly roll pan (optional: top with chopped nuts).

Bake at 375 degrees for 15 minutes. Place the pumpkin roll onto a powder sugared towel, lengthwise (15" side) and refrigerate until lukewarm.

Filling

  • 1 cup powdered sugar
  • 8 oz. softened cream cheese
  • 4 tbsp. softened butter
  • 1/2 tsp. vanilla

Combine ingredients into a bowl and beat until creamy.

Unroll the pumpkin roll and spread the filling evenly. Roll back up and refrigerate until ready to serve.


Be sure to get a save a few slices for yourself because these will quickly disappear!
